Abstract
India is called as “spice bowl of the world” for its production of variety and superior quality of spices. Spice products like Ginger oil and oleoresin has greater demand in the International Export Market. Indian export of spice oil and oleoresins is increasing significantly from 6600.05 M Tons in 2007-08 to 7264.86 M Tons in 2012-13. In view of the increasing demand, newer extraction technologies in increasing yield of value added products viz., spice oil and oleoresins is necessary and need of the day. With a view to achieve this aim, the present study was carried out in two main directions. (i) Utilization of fresh ginger for the preparation of ginger volatile oil and oleoresin with an added advantage of completely eliminating the drying process of ginger, very much useful for ginger growing regions where enough sunlight is not available which results in bacterial soft rot and sprouting of ginger. (ii) Enzyme pre-treatment of fresh ginger with four commercial enzymes viz., Celluclast, Pectinex ultra, and Herbal extraction enzyme and viscozyme to get enhanced yield of oil and oleoresin. The yields of volatile oil with enzyme pre-treatments were in the range of 0.66 - 0.79% as compared to control (0.54%). The yield of oleoresin was in range of 6.51% - 7.87% as against control (5.86%). Celluclast showed 34.3% increase in oleoresin and 26.32% increase in the gingerol extraction. Ginger volatile oil and oleoresin obtained by pre-treatment of enzymes showed higher value of alpha glucosidase and Tyrosinase enzyme inhibitions. Ginger volatile oil exhibited antimicrobial activity against Propionibacterium acne which can have a cosmoceutical application. Enzyme pre-treatment of fresh ginger and extraction has shown promising results in terms of yield of volatile oil, resin yield, gingerol content in oleoresin, higher enzyme inhibition. The results of the present study can find direct application in Spice oil and oleoresin Industries.
