Additional Information: Reviews the advantages of coating, examples of coated foods, raw materials used, different coating processes, and machinery employed. The recent advances in the technology of coating of foods have been included. A specific problem that has been encountered during preparation of this dissertation is the lack of detailed literature in books and journals as most of the information are protected under patents wherein sufficient details are usually not provided. The future areas of research are development of models of coating, surface behaviour of material to be coated, and definitely, the development of new type of coated foods with unique attributes to attract consumers and to provide maximum convenience having high nutrional status.
