Abstract
A culture medium was designed for maximal production of biomass and intracellular catalase by a potent enriched culture of Saccharomyces cerevisiae CFR-201. Growth conditions for catalase production were optimal at 30°C for 72 h, in shake flasks on a rotary shaker (200 rpm). The effect of various carbon and nitrogen sources on catalase production were also studied. S.cerevisiae CFR-201 produced five times more intracellular catalase than a local baker’s yeast strain. The cell free extract used as source of catalase removed 99·9% residual H2O2 from cold pasteurized milk at 45°C for 1 h.
