Abstract
Comparison of physical and chemical characteristics of Chinese sarson (Brassica chinensis) seeds and oil with other mustard varieties indicated that the Chinese sarson seeds are low in oil but high in protein content Specific gravity and saponification value of Chinese sarson oil are slightly higher compared to other Brassίcae seed oils. Oil contains more erucic acid and less linolenic acid than other varieties.
