Additional Information: | <p align="justify">Present investigation was carried out to delay the ripening of banana (Var.Elakkibale) and to extend the shelf life by using different post harvest treatments including Ethrel dip. and different doses of gamma irradiation under RT storage conditions. Optimally matured banana fruits (75-80%) after delatexing, sorting, grading, washing and hydro cooling were given. Ethrel dip. treatment (250ppm) to initiate the preclimacteric phase of fruit respiration for one day. Preclimacteric banana fruits after one day were exposed to different doses of gamma irradiation (0.2, 0.3, 0.4, and 0.5kGy) and stored at RT (32±30C, 65-75%RH). Changes in Physico-Chemical and Physiological characteristics such as fruit colour, texture, PLW, pulp to peel ratio, TSS, acidity, ascorbic acid, total Sugar and total carotenoids during fruit ripening under RT storage conditions were recorded on each day of fruit ripening until the fruits ripened fully. Results revealed that fruits treated with Ethrel followed by 0.2kGy dose of gamma irradiation showed significantly delayed changes in the above Physico-Chemical and Textural characteristics of Elakkibale banana during RT storage than other treatments and these irradiated banana fruits could be stored up to 6 days at RT storage with uniformly ripened fruits with very good sensory quality attributes as compared to 4days in non irradiated and 5days in Ethrel treated alone. On 6th day of fruit ripening the banana fruits treated with Ethrel followed by 0.2kGy doses of gamma irradiation showed pH 4.64,TSS 28.37 OBrix, Acidity 0.36%,Ascorbic acid 7.25mg/100g,Total sugar 18.97% and Total carotenoids 16.40µg/100g as compared pH 4.53,TSS 29.45 OBrix,Acidity 0.32%,Ascorbic acid 4.43mg/100g,Total sugar 12.56% and Total carotenoids 24.78µg/100g in non irradiated banana fruits and pH 4.76, TSS 30.12 OBrix,Acidity 0.53%, Ascobic acid 7.48mg/100g,Total sugar 16.48% and Total carotenoids 32.96µg/100g in Ethrel treated banana fruits only.</p> |
