Abstract
There is no capsule definition for food safety although, in general, it would mean “the biological, chemical, or physical status of a food that will permit its consumption without incurring excessive risk of injury, morbidity, or mortality.” Food safety issues are closely associated with changes evolving in society, economy, lifestyle, and eating habits (Doores, 1999) and can arise in response to environmental, climate, and geographical location factors. Notwithstanding temporary halts associated with societal lockdowns, there has been increasing globalization, with significant travel and movement by people. These influences have driven changes to lifestyle, food consumption trends with little limitation on what can be available in different global regions, as well as a consistent trend of processed foods for convenience as well as health and nutrition in addition to increased animal protein trade and consumption. International trade in food and ingredients continues to increase and often raw materials are obtained from one or more regions or countries and the food is processed through the use of varied unit operations in either centralized or compartmentalized scenarios. The increased globalization of the food supply chain combined with knowledgeable consumers led to the demand for a safer food supply (Stringer, 2005), which remains and is consistently challenged with traditional and new risks that evolve. © 2022 Elsevier Inc.
