Abstract

In the scientific literature, data on duck
egg is not as extensive as that on hen egg.
Besides, duck egg is popular in some parts of
India on its own merits while in other parts
it is not much in demand due to its characteristic
pungent flavour and taste. A substantial
quantity of duck eggs is available
in parts of Bengal, Orissa, Andhra and
Kerala and is not finding appropriate use
due to some prejudice. Therefore, systematic
analysis of duck egg, proximate and
in terms of characteristic fractions, is
reported in this paper.
