Abstract

Citrus oils are important flavouring materials which are being used in foods, pharmaceuticals
and cosmetics. The sources of these oils, their composition actors affecting their yield
and quality, etc., have been discussed. The methods and the machines used in the manufacture of citrus oils and the principles underlying the preparation of terpeneless and
sesqulterpeneless oils have been presented. The various (actors which affect the quality of
the oil during storage and the treatments practised to overcome the changes brought about
have been discussed.
