Abstract
Indigenous confectionery containing sugar and jaggery are very popular in North India. A survey was conducted in
different parts of Uttar Pradesh on their manufacture. Gajak prepared with sugar as well as jaggery and rewri
made of sugar were standardised in respect to quality. Packaging and storage studies were also carried out with
these preparation. Six types of packaging materials were tried, out of which three were found suitable viz. foil
laminate, H.D.P.E.-250 gauge and 18 litre friction top tins. The shelf-life of the products was six months in
packed condition.
