Abstract
<p align="justify">The volume of Interstitial gases or the internal atmosphere of 8 types of fruits and 7 different vegetables was determined. Internal volume of gas varied from 1.2 ml/100 g in grapes to 43.8 ml/100 g in pineapple. The oxygen content of the internal air of the fruits and vegetables held under ambient conditions ranged between 14.0 and 19.2%.</p>
