Abstract
A detailed study of the physico-chemica.l composition of pas~ion fruit
juice revealed that out of the total solid content of 19.6 percent (av.), the juice
contained 12.4 per cent carbohydrates. Evidently, carbohydrates constitute a
major group, comprising about 63.3 per cent of the total solid content of juice.
Little published information is available on the detailed carbohydrate make-up of
the passion fruit juice. By employing the paper chromatographic methods in con·
junction with the available chemical methods, the entire carbohydrate make-up
of the juice was, therefore, studied, the main results of which are presented in this
paper.
