Abstract

In this review, attention is focussed on the complexity of chilli pigments and their storage stability. The following sections are included: pigments of chillies; isolation and purification of chilli pigments; colour measurement of chillies; colour degradation of chillies; and effect of various factors on the colour retention of chillies (moisture content, temp., light, fat content, antioxidants).
