Abstract

In earlier publications,1 3 the results of
studies on the preparation, shelf life and
nutritive value of a protein food based on
4:4:2 blend of groundnut, Bengal grarh and
sesame flours and fortified with essential
vitamins and minerals have been reported.
The proteins in the food had a higher
protein efficiency ratio (2.29) than that
(1.7) of the Indian multipurpose food based
on 3:1 blend of groundnut and Bengal gram
flours.4 The protein food when incorporated
to provide 2.5% extra protein in a poor
Indian kaffir corn diet made up the deficiencies
in the diet and promoted good growth
in albino rats. In the present investigation,
the effect of supplementing an ill-balanced
diet consumed by school children with
53g. of the protein food daily on their
growth and nutritional status has been
studied.
