Abstract
The suitability of green tops of chicory for the preparation of leaf protein at difterent ages of the plant has been studied. The leaf protein preparations contained (on percentage basis) protein (nitrogen x 6<l5). 30; mineral matter, 29; ether extractives, 8; and carbo_ hydrates, 40, with negUgible crude fibre. Leaf protein extra<::tion was optimum in 150 days old plants 1 the bitterness in protein was removed by boillna with water.
