Abstract
An account of the several aspects of biscuit making with special reference to choice
of raw materials, manufacturing technique, suitable antioxidants and problems of
adequate packaging has been presented. Special emphasis has been laid on the
maintenance of strict sanitary conditions in biscuit factories.
