Additional Information: | The feasibility and optimization of the two physical methods of separation namely centrifugation and membrane filtration was studied, both at lab and pilot scale as the substitute for the chemical treatments to remove the suspended impurities in the sugarcane juice. Quality parameters such as color, turbidity, reducing sugars, pH and enzyme inactivation of the filtered juice was analysed to check the efficacy of filtration process. Other aspects considered include: partial concentration of the juice and rheological studies of different concentrates; Jaggery preparation from partially concentrated sugarcane juice at lab scale; Comparison of quality characteristics of Jaggery prepared from juice filtered using three different filtration methods; Study on the effect of striking point temperature on the quality characteristics of Jaggery. |
