Abstract
Commercial varieties of musk melon, long melon and water
melon seeds were analysed and found to be rich in fat and
protein. Equilibrium relative humidity of musk melon,
long melon and water melon kernels was 53, 62 and 36 %
at initial moisture contents of 4.7, 5.3 and 3.8 % correspondingly
at room temperature (20 ± 5°C). It is found
that melon kernels have good storage life, if the moisture
content is maintained below 6.6 % during storage.
