Abstract

Oils and fats are always prone to turn
rancid when stored for long periods.
Though oxygen is the main cause of oxidation
of oils and fats, other factors such as
light, temperature of storage, metallic conta·
mination, etc., promote the rancidity. The
material of construction of the container
has therefore an important effect on the
storage life or ails and fats. In OUT country,
mild steel tanks are generally used for bulk
storage of oils and fats and the consumers
usc tinned brass, aluminium, glass or lin
containers. The present article deals with
studies on storage of vegetable oils and
fats in different types of containers.
