Abstract
Mustard oil is one of the major edible oils
in Northern India. Very little information is
however available on the storage behaviour of
the oil. In a previous communication, results of
studies on the suitability of galvanized iron as
container material for mustard oil were reported
(2). This note deals with the keeping quality
of crude and refined oils with and without the
addition of antioxidants.
