Abstract

CONSIDERABLE literature is available on physical and biochemical changes in lemons during growth and development (Bartholomew and Sinclair, 1951). However, very little is reported about limes which are widely grown in India and are popularly known as Kagzi nimbu and which are commonly used in food industries and everyday household. Post-harvest storage life and changes in chemical constituents in fruits essentially depend on the time of harvest, stage of maturity, nutritional status of the plant and the season of growth (Bartholomew, 1923; Goldweber et at., 1957; Khan, 1959). It was, therefore, thought desirable to determine the physical and biochemical changes in limes during growth and development.
