Abstract

The diets consumed by a vast majority of the people belonging to the low income groups of the population in India consist predominantly of cereals and millets and contain only small quantities of pulses, vegetables, milk and other animal products1. Such diets, in general, have been found to be deficient in proteins of high biological value and certain vitamins and minerals and do not promote optimum growth in children2"4. Considerable amount of work has been done by several workers in India and other countries on the development of supplementary foods based on locally available protein-rich foods of vegetable origin, suitable for supplementing the diets of the vulnerable sections of the population.5-8 In the earlier papers of this series, the results of studies on the preparation and nutritive value of a high protein food based on groundnut protein isolate have been reported9,10. The present paper describes the results of studies on the supplementary value of high protein food to a poor Indian rice diet.
