Abstract
Protein enriched cereal foods based on blends of
different cereals, peanut flour, soybean flour and chickpea
flour and fortified with calcium salts and certain
essential vitamins have been prepared. The protein
contents of the foods ranged from 19 to 23 per cent.
The protein efficiency ratios of the different foods
at 10% protein level ranged from 2.0 to 2.2
A daily supplement of Sag. of the food costing about
1 • .5 U.S. cents will provide about 9 to 11 g. protein
and about half the daily requirements-vitamins A and D,
riboflavin, thiamine and calcium of pre-school children.
