Abstract

Canning of Pineapples (Ananas sativa) is
gradually assuming commercial importance but
the information available on its technological
aspects is rather scantyl-2. The published literatureJ
-
6 covers food values of pineapples (fresh
or canned) without any reference to variety,
while others5,7-9 deal with individual variations
in pineapples as affected by agronomical factors.
Some reports2,10-1I deal with the effect of processing
and storage on ascorbic acid retention in
pineapples12
_ No systematic report appears to
have been made in India on the suitability of
different varieties of pineapple for canning purposes
and their comparative composition, etc.
The present paper covers these aspects.
