Abstract
The susceptibility of native starches from foxtail millet (Setaria italica), proso millet (Panicum miliaceum), black pepper (Piper nigrum) and mung bean (Phaseolus mungo) to attack by fungal glucoamylase (from Aspergillus niger) and human salivary alpha-amylase was studied. Amylolysis was monitored via the release of glucose and maltose, and damaged starch granules were revealed by scanning electron microscopy. Results, shown graphically and in tables, reveal extensive amylolysis of the 2 millet starches and much less of black pepper and mung bean starch.
