Abstract
Distribution of lipase activity and change in lipase activity during desiccation of coconut (Cocos nucifera) were determined in: (i) cuticle or testa (the outermost reddish brown layer, (ii) parings (the white layer below the cuticle) and (iii) endosperm (the remaining portion of the kernel). Lipase activity was highest in (i) whereas in (iii) and (ii) it was about a twentieth and a sixth resp. of the acitivty in (i). Lipase activity determined at different stages in the preparation of desiccated coconut indicated that shredding did not affect the lipase activity, but 70% of the lipase was inactivated by steaming for 15 min at 5 lb/in and drying for 4 h at 60 degree C further decreased by 25%. Thus, only 6% of the original lipase activity remained in the desiccated coconut.
