Abstract
(i) Atta (whole wheat flour) and (ii) soji (wheat semolina) stored in 500-g packs of 300 and 100 gauge high density polyethylene kept well for 6 and 4 months resp. under accelerated storage conditions of 38 degree C and 90% RH. This is equivalent to a storage life of 10-12 months under ambient conditions (27-30 degree C, 65-70% RH). The critical moisture content for storage of (i) and (ii) was 13.9% and 15.9% resp. The cyclical changes in temp. and RH of the storage atm indicated that there was no condensation of water vapour inside the pouches.
