Abstract

Quality control of processed fruit and vegetables is reviewed under the following headings: quality of raw materials; effects of cultural practices on quality; staggered harvesting; quality factors and their measurement (size and shape, colour, viscosity and consistency, texture, sizw grading, flavour characteristics, examination of defects, additional quality factors); quality standards; sampling; in-plant quality control; acceptance inspection; process control; finished product inspection; process control staff; score cards for quality assessment; sanitation and health problems; quality control measures for specific products, e.g. soft drinks, jams, jellies and marmalades.
