Abstract
A total of 240 fresh eggs were used in studies on the effect of egg orientation (large end or small end uppermost) on the Haugh score, albumen index and % thick albumen. The eggs were examined after storage for 7 or 14 days under ambient conditions (74 degree F, 62% RH). The results showed no significant effect of egg orientation on albumen quality.
