Abstract

Coorg monsoon mandarins were dipped in 1000 ppm Ethrel (2-chloroethyl phosphonic acid) for 5 min and then dried, treated with smoke for 24 h, or used as control after dipping in water before storage at 24-28 degree C and 68% RH. Ethrel treatment resulted in significant colour development and reduction in chlorophyll content during storage. No Penicillium infection was noted in Ethrel-treated and smoked fruits. Physiological loss in wt. was max. in smoked fruit (27.08% after 24 days storage) and least in Ethrel-treated fruits (20.39%). A reduction in acidity occurred in Ethrel and smoke-treated fruits up to 12 days of storage (from 1.04% for control at 0 days to 0.72 and 0.73% for Ethrel and smoke-treated fruits respectively at 12 days). Treated fruits respired faster than controls up to 15 days.
