Abstract
Aspects of flavour research covered include preparation of fruit flavour concentrates, and flavour analysis, details being given of the separation and identification of various flavour ingredients using GLC, IR, NMR and MS. Objective and subjective methods of analysis and their correlation, are discussed with reference to the flavour constituents of bananas, apples, pienapples, pears and grapefruit.
