Abstract
Kinds of citrus fruit available; structure and composition of the fruit; sources, seasons, maturity, harvesting, transportation and storage of the raw material; inspection and grading of fruit, extraction of juice, screening and blending of juices, de-oiling, deaeration, pasteurization, and filling of juices; production of types of citrus juices, concentrates, ready-to-serve beverages and comminuted drinks; bulk storage of citrus juices; enrichment of citrus beverages; changes during storage; quality control and lab. examination, and detection of adulteration are considered.
