Abstract
Firm-ripe Allahabad guavas were lye-peeled, canned in 40 degree Brix syrup, and used as the control. Various % of citric acid, ascorbic acid and ethylenediaminetetra-acetic acid (EDTA) were added to other cans. Cans of each type were stored at room temp. and at 37 degree C. It was found that the addition of citric acid accelerated colour formation at room temp. and the extent of browning at 37 degree C and that 0.25% citric acid impaired flavour within 6 months at room temp. The addition of EDTA assisted normal colour retention but the syrup became cloudy. 0.05% ascorbic acid retarded abnormal colour formation and slightly lowered the pH value. Canning in plain syrup assisted natural colour and flavour retention over prolonged storage at room temp. but no treatment was effective at preventing discolouration at 37 degree C.
