Abstract

Subchronic toxicity dietary studies were conducted in albino rats on safety aspects of residual beta-cyclodextrin in egg samples treated for cholesterol removal. Egg yolk treated with beta-cyclodextrin at concn. of 250, 125 and 20 p.p.m. was fed to rats at a human equivalent of 1 egg/day for 90 days. Daily food intake, body wt. gain, relative organ wt., histopathology, haematology and serum enzyme activities were studied. Results did not reveal toxicity of treated egg at any of the levels tested. It is concluded that beta-cyclodextrin-treated egg samples do not cause any toxicity.
