Abstract

Current and potential uses of microbial enzymes in food processing industries worldwide are discussed. It is pointed out that the commercial exploitation of microbial enzymes by the food and fermentation industries of India, is, as yet, very limited. Production in India of fungal pectinase, fungal glucoamylase, bacterial alpha-amylase, fungal alpha-amylase and diastase, and microbial proteinase is discussed. Growth trends in the Indian microbial enzyme industry are mentioned.
