Abstract
A dietary survey of slum dwellers in Mysore, India, was used to formulate 3 regional diets based on rice/wheat, rice/ragi, or ragi (Eleusine coracana). The diets were given to 20 male albino Wistar rats 8 days old weighing about 68 g to evaluate absorption, serum and femur concentration of zinc. Rats given the rice/wheat diet grew more slowly and had a decreased Zn absorption than those given the other 2 diets. There was no correlation between growth response, phytate:Zn molar ratio in the diet and absorption of Zn. Serum and femur Zn concentrations were within the normal range with all 3 diets.
