Additional Information: Jilebi is one of the most popular traditional sweets of India. Sweets are generally consumed during festivals and special occasions. In this context, jilebi is the only sweet that is consumed as a regular breakfast snack in some of the northern states of India. Inspite of its popularities and mass consumption, the preparation of jilebi remained as a manual operation involving drudgery. CFTRI – Central Food Technological Research Institution, Mysore is one among the largest and most diversified technology laboratories in the world. Its mission is to generate and apply knowledge of food science and food technology for optimal conservation and utilization of the nation’s food resources. It also integrates scientific and technological knowledge into conventional and traditional systems and practices, and local and regional realities. In the modern world, most of the work got mechanized. By mechanizing any work, human involvement is reduced and better results are achieved. With this background, the project was initiated. Thus the project involves the mechanization in the field of cooking, especially in making sweets by studying the art and applying the principles of the process engineering and design. This project deals with design and fabrication of a gadget which is aimed at shaping the profile of the jilebi with suitable batter. The profile is generated by the principle of Mathograph. The report gives the detailed work which has been carried out in designing and fabrication of the gadget. The data required for the project was collected primarily by observing the working process and also studying an existing hand driven jilebi forming unit at CFTRI besides secondary sources such as books and internet.
