Additional Information: The present investigation was undertaken to evaluate the quality of fresh water fish visceral waste through fermentation. Hence, an attempt was made to optimize the process conditions like substrate concentration (sugar cane molasses) and incubation time using sugar cane molasses as the sole source of sugar, at an elevated temperature of 37±1°C.
