Additional Information: Lactic acid bacteria are of great importance in dairy and pharmaceutical industries. They provide long-term health benefits at low cost and are relevant to developing countries. The present study dealt with the effect of Spray drying on the probiotic properties of L.plantarum which is an isolate of Kanjika (Ayruvedic fermented product) and their probiotic properties were evaluated. All the spray dried combination were tested for viability before and after spray drying, acid tolerance, 0.3% bile tolerance,β-galactosidase activity, antimicrobial activity and cholesterol assimilation activity. Comparing the probiotic properties of all spray dried combination from (2%C.S. +10%Maltodextrine) (3%C.S.+10 Maltodextrin), (3%C.S.+10%Skim milk), (5%C.S.+10%Skim milk), were found to be potent probiotics and retain all the functional probiotic properties. The result could be used for the industrial development of the dairy products formulation. Spray drying could be one of the adequate processes for microorganisms to facilitate storage, transportation and to maintain high viability.
