Abstract

Biotransformation of α-pinene was carried out using 3 strains of Aspergillus niger. Strain NRRL 326 formed five products, namely cis and trans- carveol, verbenone, carvone and perillyldehyde while strain AN, produced trans carveol and carvone fromα- pinene as the major flavour volatiles.
