Abstract

EGG is a highly nutritive article of food and the losses due to faulty methods of storage in India are tremendous. Three major considerations in the cold storage of eggs are: (1) storage temperature, (2) relative humidity, and (3) protection from materials which may impart undesirable odours to eggs because of the porous nature of the shells. To overcome the last mentioned difficulty separate chambers should be used for egg storage and nothing else should be stored along with them. 30 28 26 24 5 22 20 g 18 16 14 12 Percentage of Sodium Silicate solution. FIG. 1 Effect of treatment with various strengths of sodium silicate solution on the storage life of eggs at the Mysore room temperature (73-89°F). Miller (1) has recommended a temperature of 32-35°F and a R.H. of 80 per cent for the cold storage of untreated shell eggs. Rose and Wright (2) have recommended a temperature of 29-31°F and a R.H. of 85-90 per cent for the cold storage of untreated shell eggs. It may be mentioned here that as far as the authors are aware no work on the cold storage of eggs, from different local and acclimatized breeds of poultry, has so far been reported in India. In the present investigations an attempt was made to determine the optimum cold storage conditions for eggs obtained from local and foreign breeds of poultry. A number of treatments, viz., dipping in solutions of sodium silicate, lime, dipping in liquid paraffin and waxing was tried.
