Additional Information: | The present investigation was undertaken to evaluate the utility of fish visceral waste as source of recoverable proteins in the form of protein hydrolysate. Hence, an attempt is made to optimize the process conditions like pH, temperature, time of hydrolysis and enzyme to substrate ratio to obtain a protein hydrolysate - using an alkaline protease (Alcalase®) - from the visceral waste of fresh water fish (viz., Catla catla). Hydrolysis of visceral wastes of fresh water carp (Catla catla) using alcalase resulted in a degree of hydrolysis about 50%. The DH is significantly influenced by the hydrolysis conditions that included time, temperature, pH of the substrate and the enzyme concentration. The hydrolysis conditions for obtaining the optimum DH were – temperature of 50°C, time of 135 minutes, pH of substrate at 8.5 and an enzyme concentration of 1.5%. The hydrolysate can be removed from the mass by centrifugation and has lower amount of fat as compared to the original material. The low fat content adds to the stability during storage. The hydrolysate prepared from visceral waste has potential for applications in aquaculture / animal feeds. |
