Additional Information: A study was undertaken to see the effects of blended & interesterified Oils compared to the base oils in biological system. The altered fatty acid composition generated by blending and interesterified oils and their effects on cholesterol, Phospholipid, triglyceride in the liver of rats fed diets containing blended and interesterified oils for 8 weeks. Rat liver Microsomes were prepared from liver homogenate and some biochemical and biophysical parameters have been examined including Glucose-6-phosphatase activity in liver microsomal membranes, lipid peroxidation cholesterol & Phospholipid ratio, membrane fluidity and fatty acid profile in microsomal lipid extract.
