Additional Information: The world wide demand for high potency natural sweeteners alternative to the synthetic sweetening agents is expected to increase . Stevia rebaudiana Bertoni , a perennial shrub from the highlands of paraguay shows its greatest potential as a natural source alternative to the synthetic sweetening agents. A number of processes for the extraction and purification of steviosides exist. But there is as yet no production facility in India. This present study aims to develop a simple and cost effective method to reduce the pigment levels and browning of the crystals, which was suspected to be due to olyphenol oxidase activity. A novel method for extracting Stevia leaves with 0.01M sodium chloride was developed . It was seen that pigments absorbing at 280nm, 420nm,and 670nm could effectively be removed when 0.01M sodium chloride was used. Characterization of the crystals were carried out using HPLC, Infra red and Raman spectroscopy. Measurement of colour and sensory evaluation of the samples were carried out to assess quality. An alternative purification method using Hydrophobic Interaction Chromatography was tested. The efficiency of crystallization of stevioside in different solvents other than methanol was also investigated.
