Abstract
Diets based predominantly on a mixture of tapioca and rice or tapioca and maize are deficient in protein, certain vitamins and minerals and are widely consumed by children in several developing countries of Asia, Latin America and Africa.!-> The incidence of protein malnutrition is particularly high among infants and preschool ch ildren consuming such diets.4 Studies carried out by several workers have shown that protein foods based on oilseed meals and legumes can be used for the treatment of protein malnutrition in children,5-7 In earlier publications, the results of studies on the composition, shelf life and nutritive value of the microatomised protein foods based on blends of oilseed meals and skim milk powder have been reported8- 1o • In the present investigation the supplementary value of the protein foods to poor diets based on (1) rice, (2) rice and tapioca and (3) maize and tapioca has been studied.
