Abstract
Food shortages in Asia have intensified the search for substitute foods such as vegetable milk
and synthetic rice. Indian chemists at " Ceftri" have been in the forefront of these developments.
Here the scattered literature of the subject of substitute foods is brought into order
and perspective.
