Abstract

Jawar (Sorghum liulgare) is one of the most important food crops widely cultivated in different parts of India. It is consumed as a staple food by millions of people in several states in India (l). The working classes generally prefer jowar to softer grains like rice because of its cheapness and sustaining qualities. In view of the present acute shortage of rice in the country, it has become necessary to make up the deficit through the use of other grains like wheat and millets (2). In an earlier paper, the effect of replacing rice by ragi on the nutritive value of the diet was reported (3). The results showed that the overall nutritive value of a poOf rice diet was considerably improved when a part of the rice (25% or 50%) was replaced by ragi. The present paper deals with studies on the effect ofpartial or complete replacement of rice in pOor vegetarian diet by jowar on the growth and composition of blood and liver of rats.
