Abstract

Studies on protein nutritional value of a weaning food based on malted ragi (Eleusine coracana) and green gram (Phaseolus radiatus) are described. Data are given for total and available lysine, tryptophan, threonine and methionine + cysteine concn. and PER and NPA values, biological value and digestibility (in rat feeding trials) of this weaning food, a proprietary weaning food, dried skim milk, and a blend of the malted ragi/green gram weaning food with 10% dried skim milk. Amino acid composition of the malted weaning food was good apart from a deficiency of threonine; protein nutritional value was equivalent to that of the proprietary weaning food. Addition of 10% dried skim milk improved protein nutritional value.
