Abstract

Aflatoxin production by A. flavus, and A. parasiticus on unpolished rice, polished rice alone or with 8% bran or 4% rice bran oil, and 4% rice bran oil with and without ethanol in a synthetic medium; and efficiency of sucrose, oleic acid, palmitic acid and lauric acid on aflatoxin production were studied. Aflatoxin B1 production was higher on dehusked and polished rice than on dehusked and unpolished rice. Polished rice with added bran is a poor substrate for aflatoxin production. A. parasiticus responded to rice bran in aflatoxin production in the same way as A. flavus. Both fat and carbohydrates were utilized to the same extent. Sucrose increased toxin production by A. flavus and by A. parasiticus under stationary and shaker conditions resp. while fatty acids reduced the toxin formation. Addition of fatty acids to sucrose medium inhibited the toxin production by A. parasiticus under stationary and shaker conditions. However, A. flavus showed some increase in toxin only under submerged conditions in the cases of palmitic and lauric acids. Experiments with [-1-4C]palmitic acid in the presence and absence of sucrose showed that A. flavus synthesised the bulk of the toxin from sucrose and very little from fatty acids.
