Effect of packaging on quality of Sohan Halwa during storage.

Studies were conducted on effects of packaging on shelf-life of Sohan halwa, an Indian confection based on flour from germinated wheat, refined wheat flour, sugar and hydrogenated vegetable fat. Samples were prepared with added BHA and citric acid (0.02% and 0.004% fat basis resp.) Moisture sorption characteristics were studied, and samples were packaged in high-density or low-density polyethylene, paper/Al foil/low density polyethylene laminate or paper/low density polyethylene/Al foil/low density polyethylene laminate packs, or in cans. Samples in cans were packaged in air, N2 or CO2 atm. Samples in flexible packs were stored for O180 days, those in cans for 300 days at 27 degree C, 65% RH. Samples were analysed for free fatty acids and peroxide value; sensory quality was evaluated. Shelf-lives were less than 30 days in low-density polyethylene packs, 120 days in high-density polyethylene packs, 180 days in Al foil laminates, and P300 days in cans. Increase in peroxide value during storage was greater for samples packaged in air than for those packaged under CO2 or N2.
