Abstract
Attempt was made to design a suitable retail functional package for buns. The packages tried are 60 g/m-2 Kraft paper, 300 MST cellophane, 100 gauge low density polyethylene (LDPE) and 100 gauge high density polyethylene (HDPE). Humidity-moisture relationship studies were done at (i) 30-40% RH and 40 degree C; (ii) 65% RH and 27 degree C and (iii) in refrigerator (4 degree C). The critical moisture levels were less than 16% and greater than 24% (DM) for texture and mould growth resp. It was concluded that buns packed in LDPE and HDPE film pouches were acceptable up to about 7 days at 27 degree C and 65% RH.
